Sexton Spinach Balls

Ingredients:

2 packages chopped spinach, cooked and drained
1 1/2 cups grated parmesan cheese
2 cups Pepperidge Farm (or similar) Herb Stuffing Mix
2 onions (chopped fine)
3/4 cup (yes 1.5 sticks) butter, melted
1/2 tsp thyme
1 tsp black pepper
1 Tblsp minced garlic
(shouldn't need salt but you can add a dash or 2 if you like)

What you do:

mix all ingredients and chill for a while.  Form small balls and put in container and freeze.  When needed, bake at 375 degrees , turning once.  When done, let cool and serve.

Fried  Green Tomatoes (From Allrecipies.com)

Original recipe makes 4 servings

4 large green tomatoes
2 eggs
1/2 cup milk
1 cup all-purpose flour
1/2 cup cornmeal
1/2 cup bread crumbs
2 teaspoons coarse kosher salt
1/4 teaspoon ground black pepper
Plenty of olive oil

Directions

1.    Slice tomatoes 1/2 inch thick. Discard the ends.
2.    Whisk eggs and milk together in a medium-size bowl. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate (note to RED group – for our southern/Cajuun night I added some Cayenne and paprika to the plate). Dip tomatoes into flour to coat. Then dip the tomatoes into milk and egg mixture. Dredge in breadcrumb mixture on plate to completely coat.


3.    In a large skillet, pour vegetable oil (enough so that there is ¼ to 1/2 inch of oil in the pan) and heat over a medium/high heat. Place tomatoes into the frying pan in batches of 4 or 5, depending on the size of your skillet. Do not crowd the tomatoes, they should not touch each other. When the tomatoes are browned, flip and fry them on the other side till that side ia also brown. Drain them on paper towels.

Grilled Corn with Spicy Miso Butter

  • For the Miso Butter:
  • 8 tablespoon butter, softened
  • 2 tablespoon white miso paste
  • 1 tablespoon Sriracha
  • 1/4 teaspoon cayenne pepper

  • 4 ears corn
  • Kosher salt and freshly ground black pepper
(Joe didn't include cooking instructions, so assume you mix up the sauce and serve it with however you like to cook your corn - boiled or on grill)

Thai Style Ground Beef

Thai-Style Ground Beef Recipe

Ingredients

Cooking spray
1 cup thinly sliced leek
1 teaspoon bottled minced garlic
1 pound lean ground sirloin $
1 teaspoon red curry paste (such as Thai Kitchen)
1 cup tomato sauce
1/2 cup light coconut milk
1 tablespoon brown sugar
1/4 teaspoon grated lime rind
1 1/2 tablespoons fresh lime juice
1 tablespoon Asian fish sauce
3 cups hot cooked short-grain rice
Iceberg lettuce wedges (optional) 
Chopped cilantro 
Chopped green onions (optional) 

Preparation

Heat a large skillet over medium-high heat. Coat pan with cooking spray. Add leek; sauté 5 minutes. Add garlic; sauté 1 minute. Add beef; cook 7 minutes or until lightly browned, stirring to crumble. Stir in curry paste and tomato sauce; cook until half of liquid evaporates (about 2 minutes). Add milk and next 4 ingredients (through fish sauce); cook 2 minutes or until slightly thickened. Serve with the rice and lettuce wedges, if desired. Garnish with cilantro and green onions, if desired.

Green Monster Hummus

Sliced yellow peppers are used as a garnish for this bright green and tasty hummus.

Ingredients
1 can chickpeas
¼ cup tahini
1 teaspoon garlic powder
1 -2 tablespoons lemon juice
1 tablespoon Bragg (an alternative to soy sauce)
½ cup water
¼ cup olive oil
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried basil
2 cups raw spinach
Directions

Pour all hummus ingredients into a food processor and pulse until well-combined.
Scrape down the sides of the food processor bowl and then process until you achieve a fine consistency.
Pour the hummus into a serving bowl and garnish with olive oil, pine nuts, and sliced black olives. Serve with pita bread or your favorite crackers.

Black Bean & Feta Dep

Ingredients:
2 cans black beans (drained and rinsed)
2 cans shoe peg corn (drained)
8 oz. feta cheese
1 bunch green onions (chopped)
1 red pepper (chopped) – optional
½ cup sugar
¾ cup apple cider vinegar
¾ cup vegetable oil
Garlic – to taste
Salt – to taste
Pepper – to taste

What you’ll do:
Mix all ingredients and refrigerate overnight. Serve with your favorite tortilla chips.

Corn Crack

Ingredients:

3-4 ears of corn with the kernels cut off
Olive oil
2-3 cloves garlic, minced
1c heavy whipping cream
Kosher salt and pepper to taste

Directions:
Heat olive oil in a skillet. Add garlic and sauté till it blooms (=becomes fragrant). Add fresh kernels and sauté till roasted along with salt and pepper. Slowly add shipping cream and reduce heat. Cook till cream begins to bubble. Remove from heat and serve immediately.

Salmon Tartare Spread

Ingredients:
1/4 capers/green peppercorns
8 oz smoked salmon
2 tbls virgin olive oil
2 tbls fresh dill
1/2 tsp lemon zest
1/4 finely diced red onion

Directions:
If not smoked salmon and you have fresh bake at 350 for about 30-45 min. Depending how big a piece of salmon
Cool salmon and refrigerate ( break it up all messy and such)
Mix in food processor onion and caper/peppercorn combo
After salmon cold mix everything together in processor until finely chopped and well mixed
Serve with crackers or kettle style potato chips

Pumpkin Mashed Potatoes

Here's where I found the recipe.http://www.massresort.com/v.php?pg=144 I don't know if I measured something wrong, but I only put about 2 ounces of milk in mine. It would've been soup if I'd used 10. I also started with 1 tsp of salt and it was plenty.


1 lb Yukon Gold potatoes, peeled
1 lb canned pumpkin
4 oz butter (one stick)
4 oz brown sugar
2 tsp salt
2 tsp pepper
Dash cinnamon
10 oz milk
Peel, dice, boil and drain potatoes. Heat up pumpkin (microwave is fine.) Then combine all ingredients and mash with potato masher.

1 large green pepper diced
3 oz. Feta cheese
1 cup Greek salad dressing
 
Toss together and serve cold.

Pesto Turkey Burgers

  • 1 1/4 pounds lean ground turkey
  • 2 tablespoons basil pesto
  • 1 teaspoon minced garlic
  • 1/2 cup crumbled feta cheese
  • 1 1/2 teaspoons seasoned salt
  • 1/2 cup bread crumbs
  • 1/2 teaspoon seasoned salt

Directions

  1. Preheat an outdoor grill for medium-high heat.
  2. Mix together ground turkey, pesto, garlic, feta cheese, 1 1/2 teaspoons seasoned salt, and breadcrumbs in a bowl until evenly blended. Form into 4 patties.
  3. Grill pesto burgers until no longer pink in the center, about 5 minutes per side. Sprinkle with seasoned salt halfway through cooking

Asian-Style Broccoli/Slaw Salad

Salad:
1 head cabbage
1 bunch broccoli about same size or a little bigger than your head of cabbage
½ cup dry roasted sunflower seeds
1 cup toasted slivered almonds
1 bunch green onions or scallions
2 pkg. Ramen noodles (raw and all broken up)

Dressing
Ramen noodle seasoning packets
~3/4 veg oil
1/3 cup white vinegar
½ cup sugar

Toss everything together with dressing (and whisk it well before you pour the dressing on) right before serving

Pea Dip

2 lbs frozen peas (thawed)
½ bunch cilantro (washed and most stems trimmed off)
2 cloves garlic, minced
¼ C lime juice
2 T rice vinegar
2 T soy sauce
1 t ground cumin
¼ t red pepper flakes

Put everything in blender or food processor and blend

Herbed Tomato Sauce

Serves 4

2 T olive oil
3 shallots OR 1 small onion, finely chopped
3 cloves garlic, minced or pressed
1 1/2 pounds tomatoes, finely chopped
2 T no salt added tomato paste
1/2 C chopped fresh basil
2 t chopped fresh rosemary, or 3/4 t dried crumbled rosemary
2 T snipped fresh chives or minced scallion greens
1 1/4 t salt
1/4 t cayenne pepper (or to taste)
10 ounces medium tube pasta, such as ziti or penne

In a large nonstick skillet, heat 2 teaspoons of the oil until hot. Saute shallots/onion and garlic, stirring frequently, until shallots/onions are tender, about 5 minutes.

Add the tomatoes and tomato paste, and stir til just warm and the tomato paste is incorporated.

Add basil, rosemary, chives, salt and cayenne to the skillet, stirring well to combine.

Meanwhile cook the pasta til just tender and drain well. Combine sauce and pasta. Serve with Parmesan cheese, if desired.

To make it even faster, you can substitute a can of petite diced tomatoes instead of the fresh.
